Finger lime – Prickly, Posh and Packed with Nutrition 

Finger lime (Citrus australasica) is a small, slow-growing tree of SEQ rainforests. The fruit is long and narrow and can be green, yellow, black, purple or red. Finger lime shrubs grafted onto hardy citrus rootstock are available in many plant nurseries. 

The fruit’s pulp may be green, yellow or pink. The caviar-like pearls are treasured by foodies and chefs for their attractive appearance and tangy citrus flavour. Many recipes ranging from cupcakes and cordials to oysters and cocktails, feature finger lime as a zesty ingredient. Try muddling the pulp with ice and sparkling water for a refreshing drink. Add your favourite vodka, gin or tequila for an extra kick. 

Nutritional Benefits and Growing Tips 

These little guys pack a powerful nutritional punch too. Each fruit contains three times the Vitamin C found in a mandarin and is full of dietary fibre. The Pink variety is high in Vitamin E, an important antioxidant in human cell protection and disease prevention. 

Grow your finger limes in full or partial sun, in well-drained fertile soil. Let soil dry between waterings. Feed regularly. Remove the first fruit and let the shrub reach 80cm high before allowing it to develop more fruit.
