Our member, Carolyn, cooked this from a traditional QCWA cookbook.
Simple and tasty, this would have been a slow cook recipe that was easy for a busy rural cook to prepare and put in the oven, allowing time to get other work completed.
Ingredients
- 30 grams butter (melted).
- 3 tomatoes sliced.
- 500 grams pork fillets.
- 1/2 cup stock ( 125mls)
- 500 grams of apples peeled, cored and sliced horizontally, giving circles of apple.
- 30 grams of sugar.
Method
- Preheat the oven to 160 degrees celsius.
- Pour the melted butter into an ovenproof dish to coat the base. (The dish needs to be big enough to take the fillets in a single layer).
- Layer the tomatoes on the butter.
- Season with salt and pepper.
- Next, layer the pork fillets on the tomatoes, then the sliced apples layered over the fillets.
- Sprinkle it with sugar and add the stock.
- Cover and cook for a total of 2 hours.
- Remove cover for the last 20 minutes to allow the apples to brown.
- Serve with mashed potatoes and mixed vegetables of choice.
