Pork Casserole

Our member, Carolyn, cooked this from a traditional QCWA cookbook. 

Simple and tasty, this would have been a slow cook recipe that was easy for a busy rural cook to prepare and put in the oven, allowing time to get other work completed. 

Ingredients 

  • 30 grams butter (melted). 
  • 3 tomatoes sliced. 
  • 500 grams pork fillets. 
  • 1/2 cup stock ( 125mls) 
  • 500 grams of apples peeled, cored and sliced horizontally, giving circles of apple. 
  • 30 grams of sugar. 

Method

  1. Preheat the oven to 160 degrees celsius. 
  2. Pour the melted butter into an ovenproof dish to coat the base. (The dish needs to be big enough to take the fillets in a single layer). 
  3. Layer the tomatoes on the butter. 
  4. Season with salt and pepper. 
  5. Next, layer the pork fillets on the tomatoes, then the sliced apples layered over the fillets. 
  6. Sprinkle it with sugar and add the stock. 
  7. Cover and cook for a total of 2 hours. 
  8. Remove cover for the last 20 minutes to allow the apples to brown. 
  9. Serve with mashed potatoes and mixed vegetables of choice.
