Granny Smith Muffins Recipe

This month’s recipe is from member Dorothy Rus.  

“It’s from St Denys Anglican Guild recipe book, over thirty-five years ago. The church was at Amiens outside Stanthorpe. I believe the church is at the historical centre at Stanthorpe now. My mother was a member. They are yummy.” 

Ingredients 

  • 114 grams butter 
  • 1/2 cup sugar 
  • 1 egg (large) 
  • 3/4 cup milk 
  • 1 1/2 cups plain flour 
  • 1 teaspoon baking powder 
  • 1/2 teaspoon ground cinnamon 
  • 2 cups peeled and diced Granny Smith apples 

Topping 

  • 1/4 cup finely chopped pecans 
  • 1/4 cup sugar 
  • 1/2 teaspoon cinnamon

Method

  1. Grease muffin tin and heat oven to 200 degrees C. or 400 degrees F. 
  2. Combine melted butter, sugar, beaten egg and milk in a bowl.
  3. Sift in flour, baking powder, cinnamon and mix well. The mixture should be lumpy, not smooth.
  4. Fold in apples. Fill muffin tins and sprinkle with combined topping.
  5. Bake for 15-20  minutes until lightly browned.
